Baking A Coconut And Sultana Loaf!

On Good Friday, we had my grandma over, and of course, with all grandparents comes old family recipes!

She taught me and my sister how to make this coconut and sultana loaf, which she learnt many many years ago.

We had a lot of fun making the loaves and of course, I decided to take pictures so that I could give you guys the recipe, in case you fancy making it!

I'm going to show you one with sultanas and one without sultanas, as the loaf tastes delicious both ways.

The recipe without sultanas makes two loaves, and the one with sultanas makes six (not for any reason in particular, just because we were making four for my dad to keep, two for us and two for other family members)

But you can always add or take away from the recipe to get as many loaves as you want!

The Ingredients

Caster Sugar, which I don't have a picture of, but don't forget it because it's essential!


 Desiccated Coconut


 Butter


 Vanilla Essence



 Self Raising flour


 Mixed Spice


 Sultanas (if you want to add them)



The Filling



?To make the filling for the loaf, you'll need:



200g Desiccated Coconut

2tbsp butter

8 ounces sugar 

3 tsp vanilla essence

2 tsp mixed spice



Mix together the butter, sugar and coconut



Add vanilla essence and mixed spice

 Once mixed, add a bit of water so that the mixture forms a paste.



This is the filling that will be used for all of the loaves. If you run out of it, just all a bit more of all of the ingredients and mix them until they form the paste again.



The Loaf (Makes Two Loaves)



To make two loaves without sultanas, you'll need:



1lb Self raising flour

0.5lb sugar

0.25lb butter

100g desiccated coconut

3tsp vanilla essence

Half a cup of cold water





 Put the flour and sugar in a mixing bowl.








 Add the butter and mixed spice. Then mix until the mixture forms a dough. You can also add the half cup of water to help form the dough.









 When it forms a dough, knead it together on a flat surface. Then separate the dough into two. (Put flour on the surface first so that the dough doesn't stick to it)




 Spread equal amounts of the filling on to each loaf.

Then fold the dough over so that the filling is inside it (hope that's not too confusing!)




Then place both of the dough's into two loaf tins.

Place them in the oven on 150 degrees Celsius for about an hour and a half.

After this, they should be ready! 



The Loaf (Makes 6 loaves)



To make six loaves with sultanas you'll need:



4lb self raising flour

400g desiccated coconut

1.5lb butter

2lb sugar

1lb sultanas

2 cups of cold water



This recipe is literally the same as the other, so I'm just going to add the pictures I took, but do the same thing as for the other loaves.









 

This is the point where you add in the sultanas!



























 When they're finished cooking (for the same amount of time and at the same temperature as the two above), they should look a bit like this:















And both versions taste amazing!
